Healthier Salmon and proscuitto alfredo

  • I like to play around with this dish, I will sometimes use peas instead of the asparagus. When I do that I do not add in the sundried tomatoes. 
    Also being pregnant I had to cook the proscuitto which was just as good.

  • Meat: I sautéed the salmon in a tablespoon of olive oil to desired temp seasoning with sea salt and pepper.

  • Zoodles were also sautéed in olive oil for a few minutes to desired tenderness then topped with sauce, meat, veggies and a sprinkle more of parmesan. 


  • Cauliflower Alfredo Sauce;
  • 2 large cloves garlic, minced
  • 1 tablespoons butter
  • 10 - 20 asparagus spears cut in thirds
  • 1/2 cup of portobello mushrooms
  • 3 or 4 pieces of proscuitto
  • 3 cups cauliflower florets
  • 3 1/2 cups vegetable broth or water
  • 1 teaspoon salt (more to taste)
  • 1 teaspoon of basil
  • 1 teaspoon of rosemary
  • 1/2 teaspoon pepper (more to taste)
  • 1/4 cup milk (or more to taste)
  • 1/4 parmesan cheese (I also mix in  a little mozzarella)
  • I also like to add sun-dried tomatoes for a bit of sweetness



INSTRUCTIONS

  1. Garlic: Saute the minced garlic, asparagus and mushrooms with the butter in a large nonstick skillet over low heat. Cook for several minutes or until vegetables are of desired tenderness and the garlic is soft and fragrant. Remove from heat and set aside.
  2. Cauliflower: Bring the water or vegetable broth to a boil in a large pot. Add the cauliflower and cook, covered, for 7-10 minutes or until cauliflower is fork tender. Do not drain.
  3. Puree: Use a slotted spoon to transfer the cauliflower to the blender. Add 1 cup vegetable broth or cooking liquid, sauteed garlic/butter, salt, pepper, basil, rosemary, cheeses and milk. Blend or puree for several minutes until the sauce is very smooth, adding more broth or milk depending on how thick you want the sauce. You may have to do this in batches depending on the size of your blender. Serve hot! If the sauce starts to look dry, add a few drops of water, milk, or olive oil

Finding my balance

I am working on blogging more consistently, it has been a bit of a struggle finding my healthy balance in this pregnancy. Between the cravings and fatigue I have been struggling. But I think it is getting better now.







I have finally come to a place where I am happy with what I am eating. My goal during this pregnancy is to lean out (meaning burn as much fat as possible) but still gain and build more muscle. So that means focusing on making sure my macros are where I want them to be. I am finally in a place with them that makes me happy. The foods I am currently eating satisfies my cravings without sacrificing my health and fitness goals. I am happy with the programs I have chosen to keep me strong and carry me through this pregnancy and finally starting to see a little results. I know that is 100% due to me meeting my macros more diligently this past week. So I am happy and looking forward to moving in this direction over the next 7 months.  I felt stronger during my workout today, which excited me. I am truly looking forward to what I can achieve over this next few months. #pregnantbadass that's my goal...hahaha!!!!

My life is about to change

Well would you look at that. Life is going along just fine, I was 9.6lbs (give or take a pound or two here or there) from my goal weight and bam! Now I am pregnant, you know to be honest I am overjoyed about this. But this has me completely overwhelmed with what to do about my progress for the next 9 months. Well....7 and a half now.

All of this has got me to thinking....what do I want this pregnancy to be like? I know I want it to be healthy, I know I want to show other women that they can 100% still workout and take care of themselves while pregnant. That being pregnant does not mean you have to sit around eating and getting fat. It should and can be a time of optimal health. So that's what I want this pregnancy to represent. Everything that I know it can be, everything that I have learned and become over the years culminated into this period of time to show why this is a better way of life.

So how do I want to do this;

1). Eat the way I have learned how to eat: clean, delicious fresh ingredients, putting the absolute best food available to be into my body to nourish and sustain my body and baby during this pregnancy.

2).To get plenty of rest, and

3).To workout the way I like to with the goal in mind to continue to burn fat and build lean muscle.

To thrive, glow and grow with my baby in a way that shows women just how amazing and capable this process and our bodies were designed to be. That is what I want this pregnancy to represent. So let's do it :)
