They host these diet bets for people who are trying to get healthier and lose weight, you bet your own money that you'll lose 4% of your body weight in a certain amount of time and lots of other people do too! You essentially bet on yourself to win! If you do, you get your money back plus some... if you lose, then you lose your money.

Clean Ice cream anyone :)

If you ever need a clean treat in the place of ice cream, this is the go to right here. When I first heard about this I thought....yeah right that is not going to taste like ice cream...well it does. I mean let's be honest there is a difference...but not significant enough for you to still have to dive head first into the Breyers when your craving hits. This amazing replacement satisfies the sweet, cool and creamy craving with ZERO regret.

Clean ice cream😋

Frozen banana
A few tablespoons of cashew milk (almond is fine)
A tablespoon of cocoa powder and toss it in the food processor until creamy. The great thing about this is you can do anything with it. Skip the chocolate and use fresh strawberries to make strawberry ice cream or real vanilla bean and vanilla extract to make vanilla. The possibilities are endless and because you use a frozen banana it has the temperature and consistency of real ice cream.. Enjoy :)

Goals


Today at church pastor Franklin was speaking about this being the last 5 months of the year and for some reason I didn't really realize that until he said it. This year is almost over, my how time flies. So it got me to thinking... what do I want to do with the rest of this year?

Well, I decided that I want to push myself to see just what I can do. I want to push my mind and my body to be and do better than I have ever done before. I mean as human beings if we stop growing and getting better we're dying right? I actually heard that somewhere and while I don't quite think not growing means we're dying. I do believe it keeps you stuck and just existing. Well I don't want to just exist.

I want to live, thrive, grow, and evolve. I want to push my body to it's limits and I want to set goals and crush them. So I came up with a list that I put on my bathroom mirror so I can see it everyday. Don't look at me I look a mess..lol But I put it there to remind me everyday of what my goals are and what I need to do to reach them.

So in 3 weeks after Country heat I will send in my transformation photos to Beachbody for one of the cash prizes..

In 4 weeks I submit my results to oxygen for the cover contest.

In 3 months I will compete in my second half marathon at Disney.

And in 5 short months I will take the stage again for my 2nd figure show at Wbff in Atlantic City.

I am very excited and looking forward to all these goals. I know it's not going to be easy and I will have to make a lot of sacrifices but if they were easy they wouldn't change me.. and staying the same is not in my game plan.

Yummy clean vinaigrette dressing

Today's salad creation features a dressing I made from the Country Heat meal plan, a yummy balsamic vinaigrette. It was so good and so easy to make. I already had all of the ingredients in my kitchen. And an added bonus, you can also drizzle over baked or grilled chicken, fish or veggies.

6 tbsp of balsamic vinegar
1/4 cup of fresh lemon juice
1 tsp of raw honey (or pure maple syrup)
2 tsp. of Dijon mustard
6 Tbsp. of extra virgin olive oil

Combine; lemon juice, vinegar and honey in a medium bowl whisk to blend.
Stir in mustard and mix well.
Slowly add oil while whisking and mix well.

You will want to store the remaining dressing in the fridge.
The oil may thicken when cold so sit dressing out at room temperature for about 30 minutes before using.

portobello cap tuna melt

This Portobello cap tuna melt was absolutely delicious and completely satisfying. Straight from the Country Heat Meal plan.
4 large portobello mushroom caps, remove stems and gills
1 tsp. olive oil
1½ cups solid white tuna, packed in water, well-drained (about 8 oz.)
½ medium ripe avocado, mashed
2 Tbsp. fresh lemon juice
1 Tbsp. Dijon mustard
2 Tbsp. chopped fresh parsley
½ tsp. garlic powder
4 tomato slices
½ cup shredded Swiss cheese
1. Preheat oven to 425° F.
2. Place mushrooms on a baking sheet smooth side down. Brush evenly with oil. Bake for 20 to 22 minutes, turning after 10 minutes. Mushrooms will be softened. Set aside.
3. While mushrooms are baking, combine tuna, avocado, lemon juice, mustard, parsley, and garlic powder in a medium bowl; mix well.
4. Top the mushrooms evenly with tuna mixture, tomato, and cheese. 5. Return mushrooms to oven. Bake for 3 to 5 minutes, or until cheese is melted; serve immediately.

Try to avoid washing mushrooms but if you have to, use as little water as possible. Mushrooms absorb water and get very watery while cooking. • A clean brush (like a paintbrush) or cheesecloth is a good way to clean mushrooms.

Growth

Made to Crave

As, I mentioned before me and some of my girls in my accountability group are collectively studying "Made to Crave". So here is a little gem I received this evening. What stood out to me the most in tonight's reading was her break down of the definition of compromise. I have never really dug into it before. I mean, we all know it means to give something up but to think of it as exposing me or making me vulnerable...well gosh, how much more vulnerable can I be than right now on this journey? And then to top it off another definition of the word is to weaken...YIKES!!! Have you ever considered that before...that every time you compromise your commitment to getting fit and healthy that in some way your weakened....holy moly. But to know that I was made for more than compromise. I was made for more than constantly giving away something or a piece of me. Isn't that sort of the way you feel when you give in to a temptation? Like you just gave up some part of you that you wanted, like a piece of your new found growth,like some part of the new you that was developing.. I do.. I/We are made for more, we are made for God's promises, in every area of our life. Don't fall for the lies that Satan whispers to you....you know that little voice in your head that says it's not fair that you can't eat that, or you deserve the chocolate cake. And don't let him tell you how good it will feel in the moment. Think about how you will feel in the morning or immediately after for that matter. That helps a lot when I think about drinking. I think of everything I will be throwing away, how disappointed I will be in myself, not to mention my family. Now that latter part doesn't necessarily coincide with getting healthy but you would essentially be give away all that you've worked so hard to build. Don't Compromise.....
